Spinach with Bacon, Mushrooms and Blue Cheese
serves 4
Ingredients
- 16 oz fresh baby spinach
- 4 sl thick-cut bacon, 1" pieces
- 1 ea red onion, 1/4" slice
- 1/2 lb chanterelle or crimini mushrooms, sliced
- 1 cl garlic, minced
- 1/4 C red wine vinegar
- 1 t Dijon mustard
- 1/4 C olive oil
- 1/2 C blue cheese, crumbled
Instructions
- Brown the bacon, remove and drain. Repeat with the onions in the bacon fat, then with the mushrooms.
- Sauté the garlic, vinegar and mustard in the bacon fat. Whisk in the oil, return the bacon, onion and mushrooms to the pan, then season to taste. Toss the spinach in the dressing.
- Plate, garnish with blue cheese, and serve.
